Meal Plan for June 9 - June 21
Hello! It’s another rainy week ahead here so it doesn’t even feel like summer - bummer! Anyway, as summer activities kick off and we get busy, I decided to do an easy 2-week rotation of meals for dinner. That means I’ll do the same meals (or close to it every two weeks). I like to do a good mix of easy meals like crockpot BBQ chicken, Sandwiches, Oven-Baked Ribs, and mix them with tried and tested recipes that might take more prep. This way I don’t get burned out from hours a day in the kitchen.
Breakfast
Muffins
Parfaits
Oatmeal
Cereal
We keep muffin mix (both homemade and packaged) in our pantry to eat at least once a week. We also do oatmeal a few times a week, and I keep the packets on hand for busy mornings and because they are usually less than $2 a box! Parfaits are the seasonal treat we will be enjoying the next two weeks as berries are on sale, as well as yogurt.
*Tip - Greek Yogurt contains the most protein, which of course can keep your kiddos full. The store brand plain or flavored is basically watered down milk so I usually add some protein granola.
Easy Parfait Recipe:
1 cup yogurt of your choice (Greek, Plain, Vanilla, etc)
¼ cup cut berries
¼ cup granola
Layer the yogurt, berries, and granola and voila! Add more or less of the toppings depending on preference.
Lunches
Also in the stockpile, courtesy of shopping the Cinco De mayo and Memorial Day sales, are hotdogs (freezer obviously not the dry pantry) - baked beans, pasta, tortillas, and chips. We will definitely utilize those!
Sandwiches, Chips, Fruit - make easy bag lunches for days we go to the park or to other activities and don’t want to buy expensive, empty fast food
Cheese Quesadillas, Rice, Vegetables
Leftovers from Dinners
Hotdogs or Corndog Nuggets, Baked Beans, Fruit
Hibachi Noodles with leftover veggies or meat
Chicken Nuggets (Dino Shaped for our Dinosaur Week!)
Week 1 Family Dinners
Mac & Cheese, Pinto Beans, Cornbread, Cooked Cabbage (feeds 8)
Homemade Pizza, Salad, Wings (feeds 6)
Crockpot BBQ Chicken, Corn Pudding, Green Beans (feeds 8)
Leftover Chicken, Fried Rice (feeds 8)
Grilled Chicken, Leftover Sides or whatever is on hand
Breakfast for Dinner (Homemade waffles, Bacon, Eggs, Grits)
Week 2 Family Dinners
Oven Low Country Boil (feeds 6)
Hamburgers, Slaw, Baked Beans (feed 8)
Meatball Casserole, Salad (feeds 8)
Ribs, Leftover Slaw & Beans, Pasta Salad (feed 6)
BLTs, home fries or potato salad (feeds 8)
Tuna Patties (soooo good), leftover sides or salad (feeds 6)
